smashed red potatoes with garlic & thyme

ugh, how terrible are we at keeping up with this thing? i’m super sorry about that. i promise when i cook things i always go “oh my god, this would be awesome for the blog” & then i don’t, because i’m sometimes forgetful. but i made some delicious taters tonight that i wanted to share! you will need:

  • red potatoes (as many or as little as you want)
  • salt
  • pepper
  • garlic powder
  • thyme
  • olive oil

pre-heat your oven to 450 degrees. grab a pot that can hold how many potatoes you’re trying to prepare (i only cooked three, & i have leftovers). put some water in that pot, & some salt. get that water to boilin’! once you see those magical bubbles, plop in your taters. cook them until they’re fork tender.

on a baking sheet, pour some oil so the taters won’t stick later. when the taters are done cookin’ in the pot, put them on the pan. OMG Y’ALL HERE COMES THE FUN PART. get a potato smasher if you have one (i don’t) or a drinking glass (i have lots of those) & SMASH DEM TATERS. don’t smash them so much that they’re completely flat—they should kind of look like open baked potatoes. 

next, get some more olive oil & drizzle them on the potatoes. after you do that, it’s your turn to be creative! sprinkle, drizzle, or pour whatever seasonings you want on your taters. i used some salt, pepper, garlic powder, & thyme…& it was awesome. i think rosemary would probably be good, too.

put the taters in the oven & let them bake for about 20 minutes. pull them out & get ready for a tasty treat! i paired these smashed red gems with lamb chops & a veggie-filled salad….but ya know, follow your heart.
